Scotland is famed for her whisky distilleries, with Scottish whisky being the most admired and sought after in the world.  Each and every distillery holds a little-known secret - when whisky is maturing in an oak barrel, over time some is lost to natural evaporation.   Distillers call this phenomenon 'the angel's share', which certainly conjures up some romantic images of angels taking their cut from every barrel!
